A Meal with Meaning: Gems Bring Joy to Teens at Camp Rainbow Gold

On a warm summer evening in late June, laughter echoed across the rolling hills of rural Idaho as dozens of teens gathered around the dining hall at Camp Rainbow Gold. Their plates were piled high during one of the most beloved traditions of the summer: Tater Tot Casserole Night.

The annual tradition, served once during each camp session, is more than just a fun meal 鈥 it鈥檚 a symbol of resilience, joy, and the healing power of community. Thanks to Simplot, the iconic dish was once again a centerpiece of connection and celebration.

Simplot provided cases of its signature Gems, the essential ingredient in the Tater Tot Casserole. This year鈥檚 feast, held during the camp鈥檚 teen session, included classic, vegan, and gluten-free versions to ensure every camper could enjoy the experience.

Camp Rainbow Gold is located at the Hidden Paradise medical camp complex in Fairfield, Idaho. The organization has served families for more than 40 years, providing events, programs, resources, and support to Idaho families who have experienced a pediatric cancer diagnosis. Each summer, children and teens who have experienced cancer come together to enjoy traditional camp activities like swimming, archery, biking and dancing. Among these activities, special moments like Tater Tot Casserole Night truly stand out.

The casserole tradition began years ago, with an infamous first tater tot casserole that did not go over well with campers. One longtime physician volunteer even wrote a camp parody song about it! But what started as a joke has grown into a cherished event, filled with laughter, comfort food, and shared memories.

Another tradition during meals at Camp Rainbow Gold involves passing around a funny hat and sharing 鈥淪hines.鈥 These spontaneous public compliments celebrate kindness, courage, or simply a good laugh. On Tater Tot Casserole Night, the first Shine went to the kitchen staff for their hard work and amazing meal. The dining hall erupted in applause.

Simplot鈥檚 involvement with Camp Rainbow Gold is just one of many ways the 精东传媒 Foundation invests in the well-being of communities in Idaho and around the world.
